Hey, Islanders, why is my taro white? Should it change colors after cooking? I made poi, it's delicious...but it's white (not purple).

It was marked Taro/Satoimo at the store. I steamed it until it was soft enough to put a knife through, peeled, then put it in the blender with water.

Yeah, what Kory said. Satoimo ("village potato") is Japanese taro root, different variety than kalo. Was ono, main t'ing.

Eh, I know get different kine kalo. Plus, can age'm to get moa sour. Japanee guys get different kine kalo. Maybe you wen' get dakine.
