I tried for the first time to make haupia, and it came out tasting good, but did not jell up. I used coconut milk, almond milk, sugar, vanilla extract and tapioca powder. Mixed for a long time, but never thickened well. Any suggestions? ( I did not use flour or cornstarch because this was for Passover — yes, cross-cultural grinding....)

Starch thickeners like tapioca starch (or cornstarch or wheat flour) require heat.

I've done kalua pig (in the ground and in a Dutch oven and a slow cooker), fried rice, and huli huli chicken. For really ono grinds, check with Duke!
