Depens yeah, how many kaus you like? I cook pretty good so we don’t spend a lotta money on restaurants. Anywayz, Kaneohe no get too many restaurants lidat, but da wons we get dey good enuff. Da bes won is Pahke’s across from wea Star market used to be. Da owna used to be won chef at anada fo star restaurant town side. Da pahking lot always full nite time. Dey get da bes pake food n stey reasonable too. Kim Chee’s is jez down da block, look like won hole in da wall, but dey pretty good too. Da week dey lunch special still unda $7.00. N you get two choice entre like BBQ meat; BBQ chicken; Kalbi; shrimp tempura; bi bim bop; pork chop; tonkatsu; squash n plani mo uda stuff dat I kenna tink of right now. All dis wid az much kim chee az you like.

Up da block get Koa House and dey mobetta den Liliha Bakery I tink, ‘cept no mo da bakery. But da lines fo breakfas go out to da street weekend time. I orda banana pancake takeout so I no hav to stan in line. I-hop wen open laz yeah at da mall, dey okay but I tink dey gotta try mo hard even tho dey get da lines too outside da doa. By da Hawaii State Credit Union get won new Japanese restaurant called Domo. Dey get good food n price too. So we ain't exactly hurtin down hea.

If I go townside da onei place I still go alla time iz W&Ms Hamburger on Waialae I useto go dea from small keed time, ovah fifty yeahs you know. Small keed time n college time waz almos everyday I useto ride up to da window on my bike n dey would hav my order waitin already—deluxe bbq hamburger, fries n won small coke. Waz unda one dollah back den, now gotta pay about $5.60 n da orda no stay waitin, git hahd time finding pahking lidat, dea real successful. Den of course get Zippy's n L&L all ova da place -- not great but you can survive on da food. I like dis small Japanese place down Ala Moana across da street from wea Towa Records useto be calle Toraya. We been going dea ova tweny years -- dea good. Mebbe if get guests lidat I go takem da Willows, my dad's old hangout, but real steep da prices.

So how now brown cow?

Iwilei iz mo close. If you buy freeza stuff you no like da stuff fo spoil. N da gas station ‘cause it’s Costco iz mo cheap. So mobetta go town, but da crowds dea and da pahking iz a hassle. Da credit union iz da same, Hawaii State Employees FCU right behind Zippys by da mall. Da udda pake restaurants are Kin Wah and Mui Kwai.

Now you guys talking...food my type of talk story.For your moneys worth,and not bad food,rays cafe on king and gulick.Prime rib,french toast sandwich,steak and lobster.The local breakfast menu is a winner too.You guys evah tried 1 can coconut milk per laulau,my version of luau leaf,with lomi and poi and raw maui onion with hawaiian salt on da side.I usually use da pork with sweet potato,nevah try em with da butter fish yet.Uncle peter what your specialty?How bout you braddah ed? Me i'm da steam fish man,one time I wen catch some fello iron workers at da yard,buggahs just wen pau work,and thirsty like hell.So I wen surprise dem with pualu fillet,no bones nothing but da meat,just steamed ovah one wok.On one bed of diced...ginger,green and round onion,chinese parsely.I also cover da fish wit da diced veg,den da hot peanut oil,and last but not least da kikoman soyu,tried reg soyu,kikoman da one.Ho da braddahs nevah believe was palani,da owner said I was in da wrong trade.Anyway now I hungry.Aloha

Well, now I can certainly vouch for Duke and Jay's kaukau. Oh, that gandule rice is so ono. And Duke, no foget those mushrooms wi bacon & gahlic powdah.

I do believe that I make pretty good Ohio substitutions for da kine kaukau. No mo imu so I cook the pork inna crock pot. Get one big, plenny fat pork shouldah. Rub wit liquid smoke. Rub plenty Hawaiian sea salt. No mo luau leaves and no mo ti leaes, so I put a layer of baby spinach on bottom of crock pot. Put pork with stuff rubbed all over on insai crock pot, then plenny more baby spinach to cover him all up. Den pour lilbit pineapple juice and wee bit shoyu. Com him on slow all day till fall off bone. Yummy.

No have ti leaves for laulau, but I put a couple shrimps, maybe one or two scallops, on chunk pork, one chunk chicken. Den put some baby spinach, maybe some chopped up long onions and some shiitake. Lilbit Sam Choy sesame dresing or mayonnaise. Lilbit shoyu. Wrap in banana leaves cause no mo ti leaves. Steam them in every pot we got. Fits good in one spaghetti pot with steamer insert. Also fits good in wok with bamboo steamer basket. Also have tried inside oven all wrapped up very tight in reynolds wrap.

I make haupia just fine at home with low fat coconut milk from the can. Make one macadamia pie jalike hillbilly pecan pie, onliest just use macadamias. Put some whipped cream (not ccool whip) on top.

Then I make one hillbilly recipe but goes good with Hawaiian kaukau. Not Yo Mama's Banana Pudding. Two boxes of french vanilla instant pudding. One can eagle milk. One block cream cheese. One container cool whip. 7 big bananas. Chessman cookies. Soften cream cheese to room temp; whip eagle milk and cream cheese togeddah. Make pudding wit any kine milk. Works jus fine wit skim. Can use skim milk and low fat cream cheese to cut down fat grams, but if you going to live dangerously, then just go for it with the regular stuff. OK, make pudding with 1/2 cup less milk total. When pudding mixed up good add to cream cheese and eagle milk., Fold together real good. Then fold in cool whip. Same come cool whip for top also. Then get one EZ foil pan or 9x13 pan and put layer of cookies on bottom, then layer sliced banans, them layer pudding. Keep going until no mo stuff left. Keep in fridge for2-3 hours or overnight mo bettah. You will find that men will propose to you women; girls will become VERY friendly with you men and you will make plenny friends when they taste this concoction. It has jillion calories and jillion fat. A definite special occasion dessert. Could make it more tropical by addig other fruit as well, or ocnut on top lidat.

We had good dim sum in Waikiki. Had one they called scallop & taro puffs. Yum. And their siu mai was about as good as it gets!

Eny time we go Waimanu, Laupahoehoe Nui, li dat, always goine imu one pua'a. I nevah like no maia stump in dere- o mebbe jes liddle bit. But da ti leaf da one. Wen da buggah hit da red rocks, make ono kine smoke, all da ai come purple, get da ono flavah. But bettah get plenny ti leaf, unless you stay like charcoal pig! Tin foil en da imu?! Ho, some junk, dat! No mo flavah! Mebbe some pellah like da kalua taste li one soda can, but me I no like.

Any kine can holo holo go in da imu. No fish, tho- cook um too long, stay junk. Cept uhu- uhu stay ono in da imu. Pua'a, of course- den some maia, green and ripe; ulu, kalo if get (Pua'a grine all da kalo, hard fo fine!), any kine, all insai. Mo bettah da pua'a stay on top- all da fat drip down, give um flavah. Ulu and kalo unda, cause if no mo nuf ti leaf den da pua'a no charcoal.

Bes one (an dis small kine secret cause I no holoholo um)- hemo da top offa plenny whole garlics, den put da ripe maia on top- da sweet juce from da maia goine leak insai da kalua garlic, an wi da ti leaf smoke goine come so ono, goine broke da mout!

Course, da laulau- gotta get! Braddah Jay stay akamai- da niu stay da secret. But no mo from da can- junk dat! Grate da fresh, ripe niu plenny fine- we like one broke Toyota spring, grine um round an sharp an cut um wi one XX file fo teeth. Plenny hana pa'a fo make um, but goine las till you make. Be sure you try um (da niu) fo make sure da buggah stay sweet. Den you hemo da stem o da awapuhi- mo old bettah. (can use da hau if no moa awapui, but moa weak and da awapuhi get nice flavah. Fibah from da niu stay strong and get um right dere, but some hard on da manu!) Wack um on da pohaku til da fibahs stay loose, den wi da bundle of fibah scoop da grated niu an twis um like wringing laundry. All da cream goine drip out, an wen pau da grated niu goine taste li sawdust- no mo flavah. Ho, some sweet da fresh cream wen you make um lidat! Can wip um like da cream from da pipi but no, we goine make laulau!

Fo laulau da lau luau sta da mos improtan part. Da ol buggah always goine stay itchy, tough, an junk flavah. Before time I use for be one mahi ai for da lau luau- wen pik 1000 poun a mont o moa. I nevah wen sell one leaf stay moa den two week ol- an me, I neva like grine one leaf stay mo den one week ol, but two week still can. So you nevah like pik mo den two leaf from one kalo, da oddah ones stay junk already. An no can use any kine kalo- pake stay so-so, but Pololu is da kine- one kine kalo stay onleh fo da lau. Any kine goine work, if stay young, but me I grow Pololu an some pake cause mo bettah.

Kay den, so get da lau luau an plenny ti leaf cause wen pik da nui kine from da big pile you wen get fo da imu- das da lau an da lau fo laulau. Get pua'a too, cause you wen backstrap da buggah waiting fo da imu. An made da nui already. Kay den, need kalo, ulu, uhi (sweet potato okay, but I nevah like da sweet in da laulau), green maia- any kine 'ai (starch). Need one green papaya. Need limu, salt- something for flavah da buggah.

Den you goine take half dozen of the lau luau, some nui, some manini kine, den goine take half dozen moa cause like plenny lau in da laulau, an da secon ones goine face da oddah way from da firs ones cause can make um biggah dis way. Den tro in da 'ai- if only get one kine, den tree-four chunk, oa if get plenny kines den trow in one of each kine. Now da pua'a- couple fat chunks. Now lissen- dis one importan part! Take couple small kine chunk of da green papaya- no use too much, cause bittah. Rub da sap on da pua'a chunks, and put da papaya a loko oa da pua'a. Dis goine make da pua'a melt in da laulau- you goine wondah whea da pua'a wen go. Kay den, one pinch salt, some limu, den douse da buggah wi da fresh cream- no mo from da can! (Da Mendoza's frozen one if no can make um fresh- but da can kine stay junk!) Kay den, one moa small kine secret- one clove peeled garlic- dis one you nevah holoholo so you slip um in on da sly- only ting you wen carry in was plenny garlic and one gallon shoyu for marinate da next pua'a, so no feel too bad!

Now da ti leaf, you nevah wen debone um cause hana pa'a an fo why? So you jus wack two nui kine, an make one "X" wid um. Fold da lau luau ovah da insai kine, den place on da ti an wrap da ti aroun da laulau wiout turn da buggah upsaidown cause da cream all goine leak out. Da secon ti, when pau wrap, da stem on da en goine go undah da bone on da backsai oa da leaf (you nevah wen debone um, I hope?)dis goine hold da buggah close so no need da string.

Kay den, da pohaku stay red an da lua no stay too deep- cause when pau you nevah like no dirt fo stay below da top of da lua. Any logs no stay pau, tro um outsai da lua. Wi one fork stick, get couple-tree red pohaku fo put insai da pua'a, cook um mo bettah. Brush da ash wi da ti- I no like um in da pua'a! Small kine maia stump okay if get plenny red pohaku. Whack um two-tree times on da pohaku an da buggah goine shred. No use too much! Da ti have to hit da rock fo make smoke, is why. Jus small kine fo da firs steam. Now, plenny plenny ti- no need take um off da bunch, whole tops two-tree feet thik. Den da ulu, kalo, an green maia in da middle; da pua'a on top dese ones. Long side da pua'a tro in da laulau, right side up. Har fo fin da laulau in all da ti when pau, so count um! Top a dat, da ripe maia- apple, or Hawaiian cooking kine. When no one stay looking, slip da garlics undah da ripe maia- no foget hemo da top so da juce come insai!

Kayden, plenny moa ti, whole tops, stem to middle like one tipi my kupuna live in. PLENNY ti- no can have too much, but can have too litle! If wen use one maia, da lau go on top, middle to edge. Very important- place da ti like thatching a hale- da ends go PAST da ti you wen use for undah da 'ai. Den da next layah start a litle moa up. (Ti makes one ono thatch- last some long time even Waipi'o side!) When pau thatch, bury da buggah wi da damp dirt you wen dig outa da lua. Sprinkle a little wai if stay dry.

Now, watch da lepo. If steam come out, bury da spot. If come dry one place plenny quick, moa lepo- too hot dere. Byembye go surf. When pau he'e nalu, trow da net. Den scoop da prawn, poun opihi, lidat. Go get mango, ohia ai, papaya, lilikoi- any kine fruit. While da i'a stay smoking on dose logs you wen trow outta da lua, make one fruit salad and sprinkle grated nui, den cover with cream.

Byembye five, six houah lidat goine pass- keiki kine pua'a oa plenny pohaku den foa houah nuff. Goine need one ipu of wai. Wi da husk from da niu, hemo da lepo from da imu- ho, some hot! Now you goine hemo da ti leaf, start from da top, careful kine cause no like lepo in da 'ai. Da wai stay fo wen da manu come hot- dip um, feel so ono! Da ti leaf from da top you goine use foa covah da lepo roun da imu- nevah goine be one speck lepo in da 'ai! If da lua too deep, some hard fo get da lepo outside, but das okay, cause no need pull da ti all da way out- can covah da lepo still insai da rim. Byembye goine be one big kine pile 'ia n 'ai in da middle of plenny hot ti leaf- can move um to da flat pohaku covered with ti, oa everyone try take any kine dey like grine right from da imu. Half shell from da nui good foa scoop da kalua pig. Everting else come easy.

When you goine grine dis kine- kalua pig, kalo, ulu, uala, maia, uhi, da bes laulau evah- ho, no foget da garlics!- den da smoke fish, fruit salad, grilled opihi plus raw kine wi da limu, prawns, mebbe he'e lua'u wid da fresh cream an popolo and uala tips- all dis you wen holoholo, Ho! da mout goine stay so broke no one ebbah goine fix um- you nevah like eat supermarket kine again!

Braddah ed,das da same rays cafe.In fact afta dey wen move the nephew wen try keep da same location,only ting da food was'nt da same,nevah last.Ray's still get line outside,only ting lilly bit bigger.Ho braddah ed you go way back ah? I wen call lung fung chop suey dat stay listed in niu valley,das da same one.Only ting dey wen move almost 30-years ago.Alicia's still goin strong,like da bucalau salad,good poke too.Pohakus no mo,da buggah one alternator shop now,painted avacado green...yikes!Ho braddah chris das some work you wen describe,all da moa dat buggah must be unreal.I tink if I goin make em dat way,I goin make planny.What you wen describe,das right down my alley.Tanks fo sharing K-den bradda ed,I mean uncle Aloha

I wen give da hale to my keiki kane- an he nevah keep um too good I tink. No mo kalo in da lo'i, vine on da fruit tree, lidat. Sides, all dem mahi 'ai neva need one doctah, stay healty from hana pa'a. Wen/if we stay move back Big Ilan, I goine stay wi my wahine some place stay need one doctah, o I goine stay on our ahupua'a all day walk from one road. Waipi'o get plenny too many pellah dese days, plenny huhu- oh, I like um plenny, but Laupahoehoe Nui stay mo bettah, out pass Waimanu. I one jungle boy at heart.

Course get plenny place in Waipi'o wea we can jam! Bes one my fren's hale on da beach- stay set up fo dat. My place plenny good too, but I stay scaid fo see um!

Need special kine pohaku for imu! Kine get plenny small kine puka, all same size. No mo puka (pores), KABOOM! Big kine puka, Kaboom. All kine size puka, kaboom, o jus goine bus.

One time I wen buil one campfiah on tiny kine ili ili, almos sand. Was like new yeah in Hilo- some fireworks! Cold dinnah dat night!

You wuz at Mui Kwai, I tink, brah. I wen tell you go Pahke's, but you wen ovahshoot 'em. Mui Kwai get brok da mout ginger chicken - I remembah goin' deah small kid time (no comments!). My favorite dessert in dis whole wide world is Kane`ohe Bakery custard pie. Was my granfaddah's favorite too. Get one bakery in West Seattle wea da chef won one big a** trophy from one world championship, and it's da besest bakery in Seattle. But not as good as Kane`ohe Bakery custard pie, brah.

Peter, Retro says dis is one confusing ting about Hawai`i peepo (maybe ony Kane`ohe peepo, yah?) - we use all kine landmarks not deah any mo! My faddah's landmarks are hardwear stores, sporting goods stores, and auto parts stores. Minezes are restaurants and supahmahkets. As why hahd.

Da Hele-on bus schedule say da bus stop in Honokaa "Across from the Dairy Queen". Onli ting, da Dairy Queen wen pau li 1985 or summin lidat. 20 yeah latahs da schedule still say da same ting- eben do dey when buil one uddah drive in deah couple yeah back, Blanes I tink...

Went to Pahke's in Kaneohe last summer with my uncle and auntie. Great food, local atmosphere. Try to deep fried lettuce.
