I am so excited in that our halau has organized the first ever Northcoast `Ukulele Workshop. The teacher is just an ordinary musician guy, no background whatsoever in Hawaiian music. Hey, he teaches us, we going teach him, too.

But, I digress as I frequently do.

We are having a kanikapila at the halau after the lessons. Please can anyone give me ideas on make ahead pupus so that I can avail myself of the lessons as well as provide some grinz for those joining us in th first ever Ka Hui Hula o ka `Aina Punahele kanikapila. I can't put one on like Duke with the gandule rice and teri-turkey tails and Pordagee sausage.

Any ideas would be appreciated. I think I going make haupia for sure.
Maybe in the crockpot a version of pork to resemble kalua pig. But I need plenty more ideas.

Can you get decent lox-style smoked salmon? Dice it up, add diced onion (regular & green), sesame oil, chili oil to taste, Hawaiian salt, pinch of inamona (if get) - voila: smoked salmon poke. (If you need a better recipe, Momi can e-mail it later today).

Instead of pupus, how about feeding everyone at the end of the kanikapila instead? Don't want sticky fingers on uke/guitar strings, do we??

When I entertain a crowd, my crockpot and my rice cooker are my best friends. I'm a big fan of Keep It Simple Stupid cooking -- and (like you) I want to enjoy my guests, not be slaving in the kitchen while they're having all the fun!

Big rice cooker (or mebbe two)
Big crockpot homemade chili
Big crockpot home made beef stew
Crockpot of kalua pig
Big green salad

I make the beef stew and chili a day or two ahead, refrigerate them, then throw each of them into a crockpot the morning of the event and let them simmer. Kalua pig goes into crockpot just before I head to bed the night before the event (which gives us kalua pig & eggs for breakfast next morning...yum!), then simmers the rest of the day. Salad ingredients are prepped and bagged a day ahead -- ready to toss when it's time to serve. Rice cooker(s) get going as first guests arrive.

Feeds a crowd (and if you're lucky, leftovers for you!).

What Auntie didn't mention is we are having the workshop at a music store, and the kani at the halau. We can't leave stuff in the car while we're at the store at this time of year. The crockpots we may take to the halau earlier and plug them in there. We can probably run home if necessary, it won't be too far. But we don't want to spend our kani time running around & setting up. We have a washroom in the halau, so messy fingers won't be too much of a problem.

K-den...change of menu!

Teriyaki chicken drumsticks...cook the day before, then into fridge, and serve chilled at workshop. Wanda, if you make it low- or zero-salt, you can enjoy it too. I make my own teri sauce since our household is on salt lock-down.

Potato or potato-mac salad.

Just keep it simple, and enjoy yourselves, 'kay?

Good idea Auntie Maria -- I do have a great recipe for a soy-sauce substitute with no salt, and it tastes wonderful!

Retro & Momi's poke recipe sounds good for those who can indulge. I can cook real food for those who can indulge in the finer things in life such as food with salt.

I am wrestling with the idea of butter mochi. Debating with myself. I tell myself I'll make it for the other folks to eat, but then what if I sneak some for myself? I do have mochiko flour in the pantry.

If I was gonna bust the diet, it wouldn't be for no butter mochi. I'd hold out for Buttered Lobster! Just my 2 cents.

I think we are going to have assorted sushi, fruit tray and haupia. Maybe some dumplings or steamed pork buns.

Thinking you might want to add at least two scoop rice per person - it's a must have if you going to have pork buns and dumplings. Just sayin cuz da rice it stay in da opu longer dan da rest.

Sounds like good fun and good food.
