My ma usta eat da turkey okole. She would always eat da pahts nomo odda peepo want -- like da cheeken back, da okole, da :giblets:. Now I rarely even buy a whole cheeken an cut him up myself. I buy pieces alreddeh cut eedah skinless boneless breats or skinless boneless thighs. Sometimes I like buy a whole cheeken and put da beeyah can up his okole. Makes ono chicken. Az true! Noho cheeken! He sit on da beeyah jalike one trone. And if you no like beeyah, can have one empty pop can or whatevah and put whatevah juice you like, lemon juice, orange juice, even brot. Can even go to da stowah an buy one gadget ting for to noho da moa. Fo realz!

But don da turkey okole get plenny gristle chewy chewy kine? And da buggah, he nevah get brown, always pale white like my legs when I hele Hawai`i. I do like da crispy turkey skin. Ha-ha, Paul's sistah hemo da skin da turkey befo cooking him. She cook in in one "cooking bag". His nui kino was white even when he stay done. Moa `ilikea. Az y hahd.

But my taters were good and my corn side dish. In da mashed taters instead da sowah cream owah cream cheese I usually put and da lots and lots buttah, I wen put butta milk. Give da taste of sowah cream lidat but not so many calories and fat grams. But do have some salt in it, but I figgah not too much since noting else had salt, my taters wouldn't hurt someone.

Eh, Wanda. Can use non-fat yoghurt also. Even when non-fat cooking a turkey (or chicken), get more flavor from browning the outside, caramelization.
You can set the bird on a couple carrots and celery stalks, and as the bird cooks, the veggies caramelize. Good canned chicken broth can be cooked down to concentrate the flavor. Can add garlic and onion to the roasting pan.
My leftovers are safely frozen in meals for one dimensions for future reference.

Kory - you are so right, but Paul's seestah, well, maybe das why in Hawai`i da kanes cook lidat. Dey mus have wifes like his seestah. Too cheap to buy broth.

Dukie - I not da same kine mama dat my mama waz. I no eat da less popular pieces to sacrifice for my keiki. I buy da stuff I like, like shrimps and lobstah at Christmas an tell da girls, too good for chirren. When they want to know why we never too dem to Hawai`i, we tole dem too good for chirren.

Gotta keep kids in their place, you know.

Eh Petah, whea you? How da book comin along? Not nudging, you know. Just wondering status thereof (does that sound like college speak????)

My head is aching. Snow outside again, and da electric company going all ovah da neighborhood trimming trees in way of electric lines and then they grind them up right then and there and the constant noise is boring right into my skull. I think I shall put my Patrick Landeza Christmas CD on the stereo and turn it way up. Me & popoki shall go through our Christmas cookie recipes and decide what to make.

I have a recipe for Archway Pecan nougat cookies. I was freaking because Archway went out of business and I would buy these pecan nougat holiday cookies every year. You could only get them at holiday time. I found a recipe on line from some other kind sould who was just as freaked out as I was. And the thing has no sodium, very little sugar and a moderate amount of butter. ?But ono. If anyone wants recipe, let me know.

Got Christmas cards all addressed today with popoki's help. Next task to lick da buggahs. Bleeeecch.

Sorry Eh! I still get won excuse, ah but school not pau fo me until monday. Dis semesta waz bus azz had planny werk had fo catch up on from when I was going tru chemo. I had to put in plany extra time. Kenna werk on da book wen godda go school. Anden da book I godda gedem right yeah, if was jez da music was pau long time ago, but had to add da explanations lidat.

My wife and I no like take chance da way da economy stay. But today stay numba tree dat I stay werkin on da new layout. Dis weekend or early nex week lidat I finish up da layout anden da final final edit on book 1 anden print soon, but aloha ino xmas iz gonna be won bust, da printas kenna print so no hold yoa breath. Moa realistically da spiffy book would be ready mo like Fabuary lidat. Can try pushem out soona but I no like go crazy, diz semesta waz hahd and I still goin physical tarapy lidat fo learn how to walk.

Da problem iz az won serious study of slack key lidat you know it was too big anden too hi falootin fo da public, like you say da college speaksometimes too technical had to tonem down. On topadat get planny reel music writing wid da tabs undaneat so allada guyz who can reed music fo udda instruments can play lidat. But I stay proud of 'em. It'z won cleah statement on slack key like how I wen lernem an like how I wen teachem. Anden I stay won educated bruddah, so I had to ritem in english wid da music notes yeah. But no worry get planny pictures if you no can reed.

Az I wen mansion da study waz way too big, 'coz waz from almos forty yeahs teachin so had to splidemup. No get jez won book oa two books mo like foa. Rite now looks like numba won book, da methed book, iz about two hundred pages. I trying too figah out if I should pullout da chapta on da secret stuff oa wat ? Somebody wen tell me no pudem in 'coz you godda leave da public wanting moa. But wot if I go kick off almos wen happen diz yea. So das da scoops. Aloha.

We also have a CD of pidgin fairy tales and such. One place, he talks about TV shows like Smoke Gun and Rifle Kane, both two shows that Paul loved to watch (still can ontop da old TV show channel).

While Bwana Paul is away deer hunting, `Oni`Oni and I did our gift wrapping for Christmas. `Oni ackshually is one majah pain in da `okole when it comes to rappin da makana. She likes to walk on da pepa and get kitty toenail pukas in da pepah. Den she like chrai fo eat da glue from ontop da tape. Den she like to eat da ribbonz. Az y hahd. Ah dunno if you can see in a peecha, but `Oni is polydactyl. She get choke fingahz.

On T'anksgiving I wen' bake one pumpkin cheesecake an' one plum crisp (ono, foa da record). I've made key lime pies in da pas', so I wonder if when making dakine custard if you use sweetened condensed milk foa get da velvety smooth texture. Any idea?

Eh, Duke. Good foa know da confirmation of da condensed milk. When I make plain ol' pumpkin pie, I add one package cream cheese foa make'm smooth.

My Louisiana girlfiend use condensed sweet milk in EVERYTHING: pies, cakes, breads, pastries, coffee, tea. SOME ONO! But, proportions added were her secret, since too little killed the taste and too much was overwhelming. Then I go Arizona and dat one put em in her filidough pie crusts! Daz why I do too things whereva I go: custard pie and bread pudding. Oh yeah, coffee, too.

If you like sweetened condensed milk, then gotta go to foodnetwork.com and get Paula Deen's recipe for "Not Yo Mama's" Banana Pudding. Some ono dat. It has become an Easter-time favorite in our family.

Or what about the Puerto Rican "Tres Leches" cake --wow.

OK, I'll go back to my cookie baking now. Today I'll be rolling out and cutting the sugar cookies and decorate them tomorrow.

Gotta go buy a new car today, too.

Only one week until Christmas! Woo-hoo.
